Nutty Buttery Peanut Cookies

This 6 Ingredient, Gluten-free cookies is easy to make. Have fun making them and enjoy good nutrition eating them! It takes 25 minutes to make this recipe and it makes 12 pieces of cookies.

Ingredients

Egg 1

Sugar 230g

Vanilla Extract 1 table spoon

Salt 1 table spoon, plus extra to sprinkle on top

Smooth groundnut butter 200g

Crunchy groundnut butter 100g

Roasted groundnut a handful of chopped (Optional)

 

Method

FIRST STEP

Heat the oven to 160 degrees and line 2 baking trays with baking paper or margarine

 

SECOND STEP

In a large bowl, whisk the egg into the sugar until fully combined. Add the vanilla and salt and stir to combine with a wooden spoon. Mix in the groundnut butter until well combined and a dough forms. Leave to stand for 5-10 minutes to firm up

 

THIRD STEP

Mix in crunchy groundnut butter until fully combined. Form the dough into to 12 balls and spread evenly across the baking trays. Press lightly to flatten them slightly and sprinkle over a little salt and chopped peanuts if preferred.

 

FOURTH STEP

Bake for 10 to 13 minutes or until golden brown. Transfer to a wire rack to cool for 10 minutes before eating. these can be stored in a tin for up to 3 days or frozen for up to 2 months.
